Easy crustless potato quiche

This is one of my favorites for a quick lunch.

3 large potatoes, peeled and roughly grated, or else pre-cooked and mashed.
1 large carrot, grated or finely chopped
About 1/2 cup fresh or frozen peas
2-3 onions, sliced and fried
3 eggs, beaten and salted and spiced to taste

If I ever want to make this dish dairy, I think some grated cheese wouldn't go amiss either.

Mix all ingredients in a baking pan and press slightly with the back of a spoon.

Bake at medium heat for about one hour, or until the top of the quiche is nicely browned.

how delicious this sounds, and just when I was wondering what to cook for dinner! my husband likes light dinners, as he goes to bed very early to get up to work the early shift, so this actually will be a good dinner for us! thank you for sharing!

We made this tonight! Our middle has food poisioning (from a resturant) and so we haven't been grocery shopping AND therefore I had no idea what I could make and voila!

We had it with turkey sausages on the side

Anna, I just ran upon the recipe for the potato quiche. It looks delicious, and since I don't eat very much meat and love veggie dishes, I want to try it. I am not a cook, though, and I have a question. Do you grate the potatoes using the big holes of a cheese grater? Or, if you cook and mash them, do you make them fairly lumpy? Or smooth? I know these questions sound stupid, but if you would email me with an answer or post it here, I would be so "grateful." (Pun intended!)

Hey, I just made this and it was super tasty! I added some cheddar, and used broccoli instead of peas, because that is what I had on hand, and seasoned with cayenne and chives. Husband loved it, definitely a keeper, thanks!
